I have sights on a few rifles with scopes. The scopes are 40mm leupolds, mounted with low leupold mounts. Some rifles, the rear sight would be in the way of the scope though.
The only time you see the sight in the scope picture is on very low power and it isn't obtrusive. When you turn the scope usually to four power or higher, the sight goes away. I usually hunt and shoot with my scope on five power so it isn't a big deal for me.
I've bought used guns with the see through mounts that are very high, and I don't like the feel of looking so high to see through the scope. You might though, but try them somewhere before you buy them.
