Pickled Eggs THREAD

Trailer park moment with pickled eggs!

last night I got some store-boughten pickled eggs from the 24/7 Sobeys on Tacoma, I had 3 of them cold last night, I had 2 of them left for tonight I thought I would warm them up :D, so I washed them off and put them on a paper plate in my microwave, and turned it on for about one minute same as for a coffee, well about 40 seconds in I heard this pop and opened up the microwave, and what a mess, the egg was all over the inside of the oven, the other egg was more or less in one piece, I thought 'well this is going to take a while to clean up, better have a snack before I do that' I bit into the remaining pickled egg and it too detonated as I bit into, it, luckily there was no 'shrapnel' this time. - so how's your night going? :D

Well I just read the whole thread all 31 pages of it and Iam goin to put on a pot of water to boil some eggs... wish me luck...

Just brewed up my first batch ever. 10 eggs, beets, onions covered with a beet juice, vinegar, sugar concoction. Had to top it off with some water since I didn't make enough juice. Here's hoping I'm not going to poison myself. :)

Ok... I think I've made a breakthrough. I've been trying to make the perfect "spicy" egg.. You know how hard it is to get a good hot spice to come across. My last batch got 1/2c of Sriracha Hot Chili sauce put into it and holy sh*t. We have a winner. Anyone that likes a good heat in their food will love this stuff. I destroy a bottle of this a month on everything from eggs to meat. (I love it as a straight bbq cooking sauce for chicken). These eggs demand beer or scotch. They're perfectly edible on their own, but with a good scotch are heaven.

Just don't eat the whole jar like I did. Mine didn't make it to sunset and my ass is teaching me a lesson today.

Now it's time to load up on this recipe, and more Sriracha.

I just did a batch.

12 eggs
1 cup sprite
1 cup white vinegar
1 cup apple cider vinegar
an onion
a dozen or so cloves of garlic
1/4 cup sriracha
6 jalapenos
1 tbsp montreal steak spice
3 sprigs of fresh dill.

will report in a month or so! hopefully, success. More likely, severe anal fire.:redface:
 
Well I have been doing eggs now for a number of years so I thought I would throw my .02 in.

Me and a couple of buddies do them now and again in mass production. We seal them in jars, like canning fruit or tomatoes. After a number of experiments with brines I like the simple one the best. The key is 2 parts vinegar to 1 part water.

2L vineger
1L water
garlic
onion
pickling salt
pickling spice
pepper
Hot peppers

My buddy grows hot peppers in a greenhouse. He gets the seed imported and grows some of the best peppers ever. Last year we used african pea peppers and hot chillies from Mexico but this year he grew a type of Skotch Bonnet from the Carribean and some very old and traditional east Indian peppers. We only make some jars really hot but the peppers give the eggs a flavor that is just awesome. Most of the time the vinegar takes a lot of the heat away.

Last night we did 20 dozen eggs. Here is a pic.

You know I am not sure ? I got the original recipe from a Polish family quite a few years ago and they use horseradish instead of peppers. They always said to use a 2:1 ratio vinegar to water. I know the vinegar takes away from the heat ( which given the type of peppers we are using is a good thing) but I think for me ( and probably them as well) too much vinegar makes the flavor overpowering or too strong.

The peppers really give the eggs a nice flavor and a bit of bite. We vary how hot to make them as some people like them "stupid hot" and others just like a little heat.

The Carribean pepper we used this year is dangerous, you can't go out and buy it and it is a fairly new strain from what my buddy told us. We used gloves to cut it up and if you take a good smell of the chopped pepper it feels about double that of a jalapeno in your nostrels. I had to throw out the cutting board we did them on. I think we only did 4 or 5 jars with those peppers and the rest with the Indian peppers, which are unbelievably tasty.
 
Ok, do you know of any good hot peppers I could buy at a local grocery store? I like stuff thats stupid hot... my uncle used to grow his own peppers and he threw away the cutting board as well lol one time he did not wash his hands and went to the bathroom.. poor fellow was running around the house screaming his head off!

the last batch I did I used beet juice (they are very popular online so thought id give it a try) not my type.. I prefer vinegar! So for my next batch I will try out your recipe. Just wondering what strong peppers I could buy locally you think would be a good idea!
