unless you are a leftie Kimber is a very good option. but i have seen people at the range not able to shoot theirs. they are light ... i think most of the problems is coming from being a light rifle and lack of technique ....
In a rem 700 short action, optimistically you will get 100fps gain with a 140gr VLD type bullet with the 284 vs the 7-08 in your rifle. With anything above that it's almost a wash. 160gr's will probably shoot the same fps at max loads with same powders more or less.

More efficient than WSM. Case length is 2.035 vs 2.100wsm and 2.170 .284win. So seating bullets isnt going to rob you of near as much powder. Definite advantage over 7-08. Norma made 300saum brass which can be necked down to 7mm. Again read the comparisons on the 6mm website.
Keep your Remmy chambered for a Remmy cartridge.
