Shameless Beg...

Really not a shamless beg. Better to sample before you fill the freezer and then find out you don't care for it.

Fortunately, I've connected with a hunting group on another forum that has accepted me into their camp for next years deer hunt! I'm looking forward to that, because I'm sure they will teach me A LOT.

That is the right way to learn... have fun. Make sure you practice with your rifle (or bow) as much as possible.

except for bear , you MUST cook it fully. or you risk trichinosis

A very good point.

The same can be said for snowshoe hares - not trich, but tularemia. Cook 'em fully, folks.

There's a slight risk of parasites in any game, but bears and hares take the cake by a mile.

True. But it's also true that you are way more likely to to get trichinosis from pork. I do most of my bear into sausage then a few prime cuts for smoked hams.

I like bear as a sausage meat over moose and deer.

For a cut of moose or bear meat from a kind soul... I've never had either and would like to try so that I can decide if I'll want to be hunting those species in the future...

I'm in the GTA, would prefer it uncooked/frozen if possible..

Thanks

Just saying does taste a lot better than bucks. I know blacktails are awesome much better than whitetails imho

I like blacktail/mulie way better than WT, too, but I thought I was the odd one.

Either way, I'd just as soon eat mulie buck (pre-rut) than any other red meat on the planet. Good lamb comes in second. Elk, moose, wild bison, third.

First whitetail I killed was with my car on my way to the bar coming into north bay from the Calvin area. Stream of traffic coming up the hill in front of the Ford dealership, reared up in front of me at the last second. Looked for it before giving up. Went straight to the cop shop, just happened to know the guy working that night. Asked him if it was ok to take it if I found it. Said sure. Finally did, thought it was small till I tried dragging it up the ditch. Funny, my mom had just given me a bunch of burlap bags, so I lined the trunk with them. Funny how you can't get anyone to stop to help you load a body into your trunk when you need a hand lol. Finally wrapped a bag around its midsection and got it in.
Had it cleaned that night, and hung. Brought it to a butcher and had steaks, sausage and jerk made up. Sausage and jerk was ok, pretty gamey steaks though.
Friend of my dad's let me try sausages made from moose, and in my experience, the moose is what I'd be after.

Just finished... garlic, onions Rosemary and ginger were sealed in the pan with foil... Roasted to completion then sprayed with Jack Daniels Tennessee honey whisky... Now sitting to cool. It's a little darker than I wanted (used the wrong sauce at the end)
