Best is to try them. Any guns at that price range (1000 or so) are fine guns. You just need to find the one that will fit your hand...
Search the net for review and ask yourself: do you want polymer or metal frame, fixed sight(or not),caliber (9,45,40) are you a competitor or plinker...all these question will help you find the right gun and avoid the sell/trade/exchange/buy game that will make you loose money!
Did you try the M&P with the large grip insert?

I haven't, unfortunately. I am very limited as to what I can try due to TSE's small range gun selection. It's hard enough to try certain guns, let alone certain variants or modifications.

2 very fine handgun, one is buisness (military) oriented and the other one is an IPSC/casual gun.

that SIG at TSE has been a rental for years, around 2,000,000 rounds through it. Bought one after shooting it. Here is a summary for you from a guy that owns all 3 guns you're looking at. The SIG grips and points like a Beretta, but has the weight and low recoil of a Shadow. If you buy the SIG don't make the mistake of buying it blued as the weight difference from the rental stainless you've tried is huge.
Yeah the guy helping me was actually hesitant to let me try their Sig because it was beat up so badly. Apparently it's even been welded back together in some place at some time. I shot it back to back with their rental Beretta though and I definitely preferred the Sig. The feel of the gun, comfort in my hand, lower recoil, and the trigger all felt better (to me). The magazine was difficult to load on the Sig though, but I suspect its been around a long time too (or maybe I just don't have the hang of reloading yet).
So you also own the CZ Shadow? How do you like it compared to the Sig?
What is "Blued"? The Sig for sale that I was looking at in the display case seemed to have just the plain black finish on it. It's at the upper end of my budget as it is

they have a "silver' color one, even tho it has a cracked slide it still shoots. The black Sig is about 20% lighter than the silver one, because its steel vs aluminum. The shadow is fantastic, especially for rapid fire, but I like the way the SIG grip is. The SIG I bought came with about 10 diff strength springs so I am going to try and make it as smooth as the shadow. I bought the shadow and the SIg even tho its a bunch of money, buy the shadow first because they're available everywhere, where as the p226 in 9mm isnt (unless you're buying t on EE)
Interesting, I assumed the 9mm Sig 226 was the standard. Is the military issue one .40 then?
The Sig grip was one of my favorites as well. I have freakishly large hands and it seemed to fit the best.
I'm anxious to try the Shadow, as I highly suspect that is what I will end up with as long as there are no surprises. The price is a little more reasonable too.

kalashnikov I am not sure but I don't think the CZ 75B was tested. Didn't the tests take place prior to the Communists being ousted from the Czech Republic? From what I read the SIG actually beat out the Beretta but the latter got the nod after a dealwas struck on allowing the US to have a base in Italy.
