I’ve wondered about these as well. I don’t know how the UK legislation is worded or rolled out. I’ve seen M1 Garands there as well made to shoot manual action only.
I’m guessing someone would have to tool up and make dedicated upper and lower receiver sets that could pass scrutiny at the RCMP lab as non convertible. Honestly the UK versions look like they’ve simply deleted the gas tube and added a charging handle but again their laws are a unknown.
So what would you salvage from an AR? Not much I reckon.

I have cousin who lives there and is into guns. Last time we spoke he had 22s only (bolt actions).
One of his shooting buddies tried to acquire a 308 bolt action but the powers that be decided he didnt have a good enough reason (sport shooting) and it was verboten.

New upper and bolt. You probably can keep the barrel. Use this guy's method.

Receivers, bolt carrier (minus the bolt) as everything else including the barrel can be used.
What about the gas port? Plugged somehow?
I suppose a guy could use an adjustable gas block where the gas can be turned off
