What is with the crazy prices on lee enfields?

You're about 20 years or more too late if you want low milsurp prices. As mentioned, supply and demand rules. Don't try to compare prices now to what they used to be. Pay scales are different too.

Enfields have only been going up in price, which is good as I have a number of them. I don't bother buying any 'run of the mill' enfields anymore, and restoring enfields has gotten out of my price range. I'm only looking at pre 1906 enfields now as candidates for restoration. I may even sell a few when the price of sporters gets high enough

For the commonwealth, yes. But the US didn't get involved in WWI until 1917, so see the hype happen in 2017.
