It boggles my mind that people would throw them away. I'd feel incredibly guilty.
I soak it in brine for 24 hours and then straight smoke it, over hickory chips.
Unbeknownst to me, my wife already slow cooked them in a crock pot over night. Good gal. Turkey legs are her favourite part on domestic turkies.Now time to try out your tasty sounding soup recipe Hoyt! Thanks for the ideas!
Ill have to ask her what she put into the slow cooker,but they were great! More than enough meat for the two of us, with extra for the soup she made the next day.
But I think Ive created a monster now. Wife loves the idea so much of eating truly organic, no growth hormone, antibiotic filled meat. Gonna have to get my own turkey now,, and prob some more creatures![]()

I always save the legs. Cook them in the crock pot with some spices (pepper, cumin, salt, little chili powder) for a day.
Chill them and then remove all the meat from the bone (by hand) separating those tendons.
Then coarsely chop up the meat and I then add that into the huge pot of chili I had been making. Toss the meat in near the end so it doesn't get too soft.
Turkey chili !! The best
