Best 1 shot shotgun

What is the best 1 shot shotgun 12ga for bird partridge and jackrabbit. I want it light, wood stock, 28'' barrel with interchangeable chokes maybe? Nothing fancy just something reliable that i won't mind walk in the bush with. I have a Derya now its light but all plastic wich bore me a lot.

I have a J & W Tolley from the early 1900’s that fits the bill. Single barrel, 12 gauge, 29” barrel. 5 pounds. Beautiful wood. Oops, it may be a little fancy for the OP but I like it.
 
In that category of older guns there are lots of solid performers but few standouts. A little nicer finished than most North American offerings, try to find a Beretta or Galef, no choke tubes ( just get it opened to Mod and forget about it) but definitely a step up in quality over Iver Johnson, H&R, etc.
 
I really like my Sinsinati 12 gauge from corwin arms. Has ejectors as well as comes with chokes. dirt cheap as well. Takedown is nearly impossible tho.
 
For starters, you want a double barrel. The Browning BSS side by side was ands still is miles ahead of other less expensive double barrels and for the purposes stated in the OP there's no reason for changeable chokes. IC and Mod are ideal and if you find a BSS with tighter chokes, just get them opened up. I think a BSS currently sells for around 1 Bill, probably there are better deals available. IMO, the best upland version is the one made with a straight English style stock, modified beaver forend, and 26" barrels. As handy as a pocketknife, by gum!

Sticking to single shot, there is not one stand out choice.
Always some plus and some minus to each. Choices with choke tubes are few, with nice stocks fewer, with a nice ribbed barrel and really well made fewer still.

Actually, I'm not convinced you know what a heavy gun really is. And above all, the BSS is not a "clunk." Did you get that term from your 8 year old?

I would second this! Love my Sinsinati. I got the 18" version for a truck gun. Same chokes as my mossberg maverick 88 which is a nice bonus, now I've got 3 shotguns that all run the same chokes.

Sun what issue do you have taking it down though? Other than putting the ejector into my thumb (that sucker has sharp edges!) I didn't have issues?
 
My choice has been Winchester Model 37. They're a well made shotgun and nice to handle. I have two, one is a first year production, rat tail lever and narrow hammer.
