I think there are a number of reasons that there aren't more choices in 7.62x51:
1) the ar15 platform and 5.56 is the current military rifles, so many people gravitate to what is the latest and greatest.
2) the 7.62 kicks more and is more difficult to shoot for the average (read the once in a while shooting crowd) person
3) the 5.56 is easier on the cheek and shoulder (see 2 above)
4) the ar platform is very modular and easy to make into very different variations for a relatively low price. whereas there are less options and they are relatively more expensive on an M1A or FAL.
5) there are tons of FAL's, G3's being or have been built from surplus parts making them much cheaper than tooling up a new rifle and the production line that goes with it.
6) tons of Garands through CMP are available
