i have had summer dinner parties and served cold bear roast sliced thinly and garlic bear balls (no, not what you think) ground bear meat balls gently flavoured with garlic and herbs and had vegetarians who hadn't eaten meat in 20 years enjoy it.
In my opinion it is all about selecting a younger or at least not aged animal in a good location and taking extremely good care of the meat.
I skin and quarter a bear immediately and cool the meat down as fast as possible and process it right away as well.
