Why are they dead?
I cant even touch a carp "omfg they reek" let alone even think about eating one. I am sure if I was starving to death and that was the only food I could have, then sure.. but to think about eating a bottom feeding stink fish is just... I just puked in my mouth a bit.

"...going to use a crossbow..." Got one of the retrieving reels on your bow? Don't know if they come for crossbows. And the right kind of arrow head?
lobster and catfish (huge markets for both) are scavengers who eat rotting fish while carp stick to insects, crustaceans, and plants. theoretically, a carp is the one with the better diet yet people who have no clue what they are talking about think the carp eats garbage and stinks.
pike and bass often stink as well, but they taste great.

Thats right! I am not fishing for them I am bow hunting them. My buddy and I are going to try our luck at arrowing a carp or two in the spring. What I would like to know is some recipes for cooking them and some processing advice or tips. I am going to use a crossbow so any advice on that would be appreciated...TFN...
Back in Europe I ate lots of them. The fresh carp flesh is sweet. I like the bigger ones because for it's easier to pick the bones out. Salt and roll the pieces through flour and fry them real good. Use good sauce. I prepare the sauce myself: crushed garlic, salt, water, butter-milk, grated cucumber, olive oil... mmmm finger licking good...
Make sure you can spear fish where you intend to do it. For example, in BC the regs say: "No spear fishing of any kind in Region 1."
