I could simply go for a bare bones suhl gun like above, in excellent condition from a safe trader. Nothing fancy but I'm sure would be good for a first sxs, then go into fancier later

Yes - The Suhl would serve you well. In time, you will develop specific preferences (O/U vs SxS, single vs double trigger, etc). This will guide you in future purchasing endeavours.

That's the priciest coach gun I've seen for a while... yikes . Check Frontier for their selection or pick up a nice double from intersurplus and cut it off..coach guns are fun but not worth investing big money into unless you're shooting competition like SASS.
