So this NR Maccabee receiver set takes ALL AR parts ? As in every pin, every spring, every single last part (short of the stripped upper/lower receivers) ???

All "standard" AR parts interchange. The only "standard" parts that might not fit are the trigger pins as some are over long and the MDI design requires that they be at the minimum side of length tolerances. They are easy to file shorter, but MDI will also be offering SS pins designed specifically for their setup.
Some after market "improved" parts may not fit or may not fit without alteration. This would include ambi controls, trigger packs, free float tubes etc particularly where the external dimensions of the receiver sets are critical to fitting them.
They are 2 rifle designs made my 2 different company’s. Kinda like asking what the difference between an XCR and a SCAR. They similar in operation, but that’s about it.

Where was any of this outrage over the tavor? You know the rifle that had to be cheaper than the m4/m16 as a part of its program. The same one that costs 1600 in the us and costs 2500 here...
How much is an xcr again? What about a swiss?
For all intents and purposes you are getting a non restricted ar. One to build completely to your specs. You want bargain basement, go budget brands and you have an nr ar for less than 2 grand... also less than pretty much every single one of the aforementioned nr rifles. And for not a hell of a lot more you can put together a solid almost milspec ar for comparable prices to the other nr rifles out there.
As for the hunting crowd, you can put together a wicked lightweight setup for less than the cost of custom bolt guns.

its not the fact that it "got to be worth a little extra", the facts are that scale of economy of the canadian gn market and the low number of volumes produced require a higher investment by the manufacturer.... anyone that thinks they are being price gouged (specifically the maccabee and the 102) has got to give their head a shake.

gouging occurs when it is made for the USA market then sold to the Canadian market at over twice the price.
