One of those Mora fixed blade knives. Cheap and they hold an edge for some time.
That would be because they get one for free (issued) and get replacements if they lose it.
Me, I use whatever is around. Hate using a big ol' crowbar of a knife though. Have used several of my own make, a couple little folders, with short blades, usually a drop point of some sort.
A bud of mine did quarter a moose with the saw blade on his Swiss Army knife...but that's a whole nuther thing, eh?
Grohmann #2 trout and bird seems to be my go-to every time. I have 4 different grohmann' but always seem to grab my #2.
