what knife do you use to field dress your game?

I have become a huge fan of havalon knives. They are scary sharp, like you need to use a little extra with it. Replacement blades are about $1 a piece. I always take a fixed blade along for heavy work but for fine stuff you can’t beat the havalon.

I hear the outdoor edge razor knives are very good too, for similar reasons but with a more durable blade. I've been debating between the two but haven't pulled the trigger on either... Guess I haven't seen a sale price I couldn't pass up yet lol

Replacement blades are an expensive excuse to avoid learning how to sharpen a knife.

Or an affordable reason to not have to stop to do so.

I have a Havalon that I was given, not used it on game yet. Got a couple sheep to slaughter. Maybe give it a run.

Truthfully, I am a little leery of the blades when I am tired. Not the using, the changing. I can see a lot of options for cutting myself, with just a little slip.

Outdoor edge swing blaze and this gerber fixed blade my pups (and gf) bought for me. With a worksharp they can get razor sharp. I have a havalon but I don't like swapping blades that much. Might find a different scalpel. Also an outdoor edge folding bone saw.

Rinella uses a benchmade minimalist fixed blade that's nice but expensive. I might try a kestrel knife. They got some nice ones.
 
Well, really not impressed with the Havalon. Got a quarter way through skinning out the first of two lambs and the brand new blade was useless.
Switched off to the old butcher knife and finished the lamb as well as the next. Old Hickory, I think.
 
An early 70's vintage Puma Skinner with stag handles for most jobs... for the south end of north bound animal a Rapala Fold n Fillet knife picked up at a liquidation joint for $10.... Works great for getting out the windpipes too...

I always carry a couple spares - usually someone forgets a knife or its as sharp as our current PM... Laugh2

I've used a Puma white Hunter, a Spyderco Delica 4, Victorinox Swiss Army and this spring a Morgan Koens custom on a black bear. I'll b carrying the Koens this fall.
 
I have a couple of Cold Steel Master Hunters, in stainless and CarbonV. I love 'em both. I also use an older Browning with a roughly-3-inch blade that I bought several decades ago.

I don't like folders, simply because they're a pain to clean...but they are handy and I do have and sometimes use a Spyderco folding hunter (called the Wegner, I think?).

Seriously? Did you touch any bones? I have used the same havalon blade to skin and gut 2 hogs, used a single blade on gutting an skinning a bull elk last season. I'm surprised that you didn't make it all the way through a lamb.
 
Same here. I've got a companion and a craftline pro C in my bag, and a bahco brand (looks identical to the companion basically, exact same shape with different handle material, I wouldn't be surprised if they came off the same assembly line) in the truck. The bahco was $12 from Amazon, I'm going to grab another for my fishing bag soon.

Going on 35ish years. Use a point file to sharpen it. Have those ones stuffed my pack, bike, truck and every nook and cranny.
