what knife is everybody using this year for field dressing/skinning/processing?

Havalon Piranta-Edge and Baracuta-Blaze, both with blaze orange handles so you can see them when you put them down. Both are folders that use replace-able scalpel blades - blade lengths are Piranta 2 3/4" and Baracuta 4 3/8". These knives are the heat! No stopping to sharpen your knife, and no more carrying lots of knives. Very light weight, very reasonably priced, and VERY sharp.
 
I carry the Outdoor Edge "Kodi-Pak" knife set. Holds a good edge. The company also offers free sharpening. Shop around. Seen prices from 85.00 - $130.00. Paid $89.99 for mine. Another handy accessory I carry is their "Steel Stick" rib spreader, about $10.00.

I literally have a tool box of knives that I use... Puma, Grohmann, Buck, Kershaw, Cold Steel, KOA, customs and many more. They are all impressive and for the most part hold edge very well. Last year a friend gave me the Kodi-Pak set claiming it was an amazing product. I had my doubts but finally got to use it a couple weeks ago on a bull moose. He was right, it is an amazing knife! I couldn't believe how it held up and it has a great profile.

Another great option for skinning is the Victorinox caping knife. I picked up a couple at the local butcher supply store for about $20 each. They likely wont last more than a few years, but they are sharp and make the job virtually effortless.
 
one knife for everything lol

i use one to cut off the sent glands(a folding knife does this job for me) gutting/skinning i use a buck 119 i only make a few cuts though i dont use the knife to skin the whole thing. then at home its a few different knives to butcher it
 
Good choice! I used to change my gutting and skinning knives every year. In late 90' I bought Alpha-Wolf by knives of Alaska made of quality D2 steel for $75 IIRC and since can't imagine useing anything else. It will rust if abused but if it comes to performance IMHO then only $250 and up custom knives can match it up.

Same here...bought an Alfa Wolf 3 yrs ago...it's seen 4 deer & haven't touched the blade yet, still nice & sharp & should do at least another couple deer this year!! I have a cub bear for skinning coyotes, love that little knife as well. Bought the wood/bone saw combo 2 yrs ago & can't live without them. Been thinking on buying an Xtreme Defense/Survival D2 in tan with the nylon sheath just for general camping use/because I think I need one!!

I love the Knives of Alaska line...quality knives at a decent price point!

For geese & duck I use my Outdoor Edge Folding Fillet knife...great for breasting out birds, I've done dozens upon dozens in the last 2 years & it's still factory sharp!!
 
Cutco user here, I've never used another knife that even holds a candle to a Cutco knife with the "Double D" edge. It's been 5 seasons of moose/deer hunting, hasn't needed sharpening and still out performs any other knife I've seen other people use personally.
 
Knives of Alaska, best knife I ever used. All my shrades stay in the backpack now.

I'm not a knife afficianado so whatever I happen to have on hand. A fellow I used to hang out with is a custom knife maker(Wynn Stitt) and I have a few of his "seconds" so I usually use them. In the field however I carry a traditonal old folding buck knife I have had for 30+ years.
 
"Must be one sharp knife to cut the legs off that moose like that."

I could do it at the joint but buddy had a chain saw for the legs.
 
I have owned a custom knife made by Heinz Leber from Hudson hope B.C ...I got two of them for safety awards at work in 1988 and since I talked to Heinz and had him show me how to sharpen them properly I have never gone hunting without one of them on my hip



A beautiful knife that will stay sharp through a whole moose or elk gutting , skinning ,quartering and then some .......

An experienced hunter turned me onto the common box knife, upfront cost $6-10, super cheap blades that are always sharp. I have done a few deer with it and I don't think I will ever go back to any other knife.
