I use a Buck Alpha hunter for gutting, and gut hook chores.
Then a few years ago, I picked up this set off of the Mac truck of all places. Its a Smith and Wesson set
That big cleaver looking thing really holds an edge and is excellent for moose skinning. The gut hook on the mid sized blade is too small however.
The tiny knife is my all time favorite skinning butchering knife. It holds an edge very well, and the shape and size are perfect for many chores.
I pretty much always have a Swiss army type knife with me. Of late that has been the one given to me by Heckler and Koch. It's used for tag cutting, chores at the tree stand, etc. My meat blades get used for nothing else.
It comes with a mammoth sheath, that nobody in their right mind would wear hunting, but it does store the set well.
