what knife is everybody using this year for field dressing/skinning/processing?

I use a Buck Alpha hunter for gutting, and gut hook chores.
Then a few years ago, I picked up this set off of the Mac truck of all places. Its a Smith and Wesson set

That big cleaver looking thing really holds an edge and is excellent for moose skinning. The gut hook on the mid sized blade is too small however.
The tiny knife is my all time favorite skinning butchering knife. It holds an edge very well, and the shape and size are perfect for many chores.
I pretty much always have a Swiss army type knife with me. Of late that has been the one given to me by Heckler and Koch. It's used for tag cutting, chores at the tree stand, etc. My meat blades get used for nothing else.

It comes with a mammoth sheath, that nobody in their right mind would wear hunting, but it does store the set well.

yellow olfa knife. back to razor sharp in under 2 seconds. Cheap to lose, but its yellow, so I have yet to lose it. Carpet hook blade to make initial skinning cuts if you want. Light weight. Definitely faster sharper and better than any knife out there. skinned and deboned close to 40 animals in the last few years since I switched, and I would never go back.
 
the havalon piranta is pretty hard to beat folder with disposable scalpel blades and the knives of alaska bear cub caper is one of my favorites.use whatever u like the best just keep it sharp dull knifes suck.
 
I have an old Buck 112. It has a hollow ground blade and is easy to get sharp. I have a bunch of high end knives but I like this one the best, and it's not high end at all.
 
I'm a big fan of my Browning FDT. I use the knife to start things, the guthook to zip through the hide and the saw to split the pelvis and breast. All in one knife.

I have some other custom knives for skinning and a mix of fish fillet knives for butchering.
 
I have 2 go to knives a Buck lite 422C and a Buck titanium 560C. I prefure a folding knife because you never know they are there until you need them.
 
I use whatever I happen to carry at the time. Yesterday and today I used an old two-bladed Shrade OldTimer folder to help my partner field dress two calf moose and a doe . I also used a Gerber folding saw to split the brisket and the "aitch" bone . Partner used a small Buck folder ....even to separate the brisket on the mature doe and his bull calf .....

Right there Is what I use, my rat skinner! If it takes you more then 5 minutes and you need a bigger knife to gut a deer your doing it wrong! As far as skinning them goes, I use the same knife to get the hide started, cut around the legs and neck then just cut a hole in the hide as need and peel er off. Cut around the neck and twist the head off with it too. Skinned, gutted and quartered a bear with it too!

I like knives and usually use my own home-made blades in ATS34 . This year was sort of different, I misplaced my favorite knife and resorted to carrying a couple different customs that I never made. Notice how I said "Carrying"? That's because what I did the most actual cutting with was a Heinkel plastic handled straight boning knife that I picked up at Cabelas for 20 bucks. We were boneing out most deer in the field, so I started leaveing it in the daypack with a folding DMT diamond sharpener. We didn't shoot anything in Saskatchewan that we couldn't get the truck to, the boneing knife was always around and I ended up useing it practically all the time. Sharpen it on the 72" beltgrinder at home and start over the next day on another couple deer. I suspect that even though it seems like heresy some rethinking is in order.

Cleaning skulls and capes I used a Havalon knife a fair bit. They are so sharp that I can only describe it as evil.
 
I'm surprised no one else on here is using an Outdoor Edge SwingBlade like I do! Razor sharp out of the box, great gutting blade and a very useful profile. I use mine for gutting and skinning. Also cut around the neck and pull it off too. Not bad at all for $60.

I have one...absolutely love it! Very happy with the construction, materials etc. Good buy!
