They'll both be good with the slight edge for killing going to 30-06 but if you're worried about that you should be looking at magnums.
My question would be, Is this the only rifle in this caliber you are planning on buying?
I used to have a 22-250 (loved it) I sold it and replaced it with a 223 because I was intending on having a bolt and a semi .22 cal
I now have 3 .223 and it makes things simpler when going to the range that I only have to bring 1 box of shells.
I sold my 270 and bought a 308 for this same reason. At the time I knew I wanted a bolt, a semi, and a lever centerfire rifle so I cut down on different calibers and started looking at different actions.
As a bonus this allows me to bulk buy ammo sometimes even if it's still not cheap I might shave $5-8 off per box because I'm buying 10 boxes.

Red deer filet here. The bacon is actually smoked jowl. With scallops and a baked tater. Makes a nice surf n turf style meal! The red deer was taken via 308, this time. But not overcooking your scallops is arguably more important than whatever cartridge you decide to use.
Now, back on topic, does anyone still feel that 180gr or heavier bullets are actually necessary on the big critters, except perhaps in defense against ones trying to kill ya back? With today's bullet technology, kinda feel like a "not really" is warranted, but open to hearing experiences where they fell short.

Couldn’t stand the 308 win for the longest time.
Built my son a 6br switch barrel 308win just to get enough separation in two cartridges to make it worth while. Both cartridges have made him a better rifle shooter. The clickers better track at distance and some English for wind is a pretty good learning tool.
A number of deer, bears with the 308 calm report no need for ear plugs in the field just pleasant to shoot. He smacked one deer at 650 ish m a couple years ago no big story or anything really lung shot deer ran 40 yards piled up.
We enjoy shooting and consider barrels consumable items but it’s nice not to have to worry about barrel life for the most part with the 308 win.

Yeah. but that 's true of most cartridges, even ones considered barrel burners. If you are putting a few boxes of ammo, say around a 100 to 150 rounds per year for range practice and hunting, you wo't be running out of barrel life too soon, especially if you don't run 'er hot and put 'er away wet, so to speak.

Inside the distances most hunters should be shooting at game, the difference between the two is negligible. The only real advantage of the 06 is slight speed and the ability to use heavier bullets. As a reloader and deer hunter, the .308 is more appealing for powder savings alone. This from a guy who has owned both .
Both choices are good , but maybe try both as I find there is a noticeable recoil difference between the two .....and with you being new to the sport , I am sure you will notice the difference as well ; for this reason , I would recommend the 308 as a first hunting rifle . The Canadian Rangers use 308 , and I haven't heard any complaints .
